Theory - Introduction and types (couverture and compound) of chocolate. Melting techniques for proper melting. Tools and equipment required for beginners, introduction to machines for large scale production. Types of moulds (details and differences). essential tips.
Practical - Melt chocolate using all methods, couverture tempering. Add flavours and colour chocolate. Make hard and soft centre chocolates, lolli's. Use of transfer sheets. Wrap chocolates in different ways, packaging.

You are required to have a basic working knowledge of chocolate, melting, flavouring, moulding and demoulding.
This course involves working extensively with couverture chocolate, tempering methods, seeding, temperatures. Making hollow 3d chocolates, bonbons, truffles from scratch. Theory intro on the process of bean to bar.

You will learn the process of panning in which nuts, dry fruits etc are uniformly coated with chocolate.
Operating on a large scale panning machine, working knowledge and maintenance of machine, processes involved - uniform coating, temperatures, glazing/shining, post-production, storing, pricing and packaging options.
